Classic soft pretzel with all of the time honored requisites of a Bavarian classic. We use a traditional German baker's guild recipe but with a vegan, organic zero trans fat expeller pressed oil butter replacement. Pure alpine mountain well water, slow acting dry yeast, beer, barley malt and two kinds of King Arthur Flour. To finish, a specially sourced medium grain pretzel salt to top it off adding just the right amount of snap and saltiness. (VEGAN)
Who doesn't like an everything bagel? What's not to like? Savory chopped onion, garlic, sesame seeds, poppy seeds and just a little bit of salt to enhance the aroma and flavor. A great option for those on a lower sodium diet. (VEGAN)
This our version of the Kasebretzel which literally means "cheese pretzel" in German. Typically topped with Gruyere or Comte, this type of pretzel is often seen in the border cantons of Austria, Switzerland and Alsace. We put a combination of New England cheddar and smoked paprika over these when we bake them. A wonderfully aromatic scent wafts from the bakery when we open the oven door to take them out. They taste smoky, earthy and woodsy like a walk in the Black Forest. An absolute must have for cheese lovers!
This was born out of one of our customer's request for a pretzel with a little bit more heat. The idea evolved from a quick brainstorm. Habaneros? Too spicy. Fresh Jalapenos and Cheddar? Check! How about adding some cream cheese and hot sauce to the mixture? That's it! A Jalapeno Popper on a pretzel! This one is cheesy, tangy and spicy but not too spicy.
A variation on the Kasebretzel made with blue cheese, a bit of cream cheese and wild chives. This one is almost like a cross between a pretzel and savory cheese pastry. The chives grow on a sloping mountain terrace behind our bakery. Wildly delicious!
Cinnamon Sugar just may be the perfect pair. It never met a cookie or bun that it didn't improve! Our Cinnamon Sugar Pretzel is not just "fried dough" that is shaped like a pretzel. It is a real soft pretzel that is baked in the oven. When it comes out, we brush both sides with vegan butter and then press on our Cinnamon Sugar mixture by hand. Grandma would be proud!
